I'm completely new to RPis, but want to build a travel version of our plex server. I plan on reencoding everything to a smaller resolution/size, and including a limited selection of movies & tv for the kids when we travel. The three planned usage scenarios are:
- in a hotel, plugged into room TV HDMI port
- in my car using RCA inputs ('13 Odyssey w/ RES)
- in my wife's car using HDMI or RCA inputs ('18 Pilot w/ after-market DVD)
I'm looking for advice on the components, as I'd like to put all of the media on a separate 512GB (or 1TB) SSD (2.5" form factor). From my estimation, the Pi 3 B+ is the best suited for its processor and cost.

I don't know the models from Geekworm, nor am I totally familiar with RPi. Any advice/input is very welcome. Cost IS an issue (I have 4 kids), however sacrificing functionality is also not desireable (all 3 scenarios are ideal, in order of precedence).
